You will need to take a quick measurement to make sure that the Kuat Pivot, part # PVP20B will clear your step bumper. Simply measure from the center of the hitch pin hole to the furthest point of the step bumper away from the hitch. This will give you your required clearance in order to be able to use the Kuat Pivot.

The Draw Tite # 75601 and the Curt # 13358 that you referenced both are a fit for your 2017 Mercedes Benz Sprinter 2500. From the top of the shank (the part that goes into the hitch receiver) to the top of the railing of the 22x59 Rola Cargo Carrier for 2" Hitches 59502, it is about 6-3/4 inches high.

The 12' 3" x 8' measurement is for the fabric of the Thule HideAway Awning # TH64WJ. The cassette and end piece are each approximately 2-3" thick each. The only difference between the # TH64WJ, # TH490010, and # TH490008 is the fabric sizes.
The cassette is going to extend past the adapters and does only require 2 connections.

You are correct and the upper arms are narrower than the basket at the bottom of the Viking Solutions Carrier part # 310-VSR201. The top one is going to have an inside dimension of 29-1/2 inches long, by 14-3/4 inches wide.
